What soup is best than a healthy and delicious potato soup? We all know that a lot of us tend to consume this soup during the winter, or maybe when we fill chilly or come down with a cold, now I'm going to share my Vitamix potato soup recipe with you so you don't have to order from a restaurant all the time.
The first thing that should come to your mind when preparing this soup recipe is its nutritional value.
Potato, being a vegetable consists of numerous nutrients that the body needs like vitamins, which help boost the immune system.
Now that we've learned one or two things, let's get cooking
Potato Soup Ingredients
- 3 potatoes (you can use more, but this is the quantity I'm going with)
- Onions
- Fresh celery
- Garlic
- 1 teaspoon Rosemary
- 1 cup of vegetable broth
- 1/2 teaspoon salt
- Low-fat soy milk
How to make creamy potato soup
- Cook and peel your potatoes before taking them to the Vitamix blender. Three easy ways to do this are
- Place your potatoes in a microwave and cook for a few minutes, after that remove and place in cool water for a while, this would make it easier to get rid of the skin, now you can move it(alongside other ingredients) to your high-power Vitamix blender
- OR you can get rid of the skin by placing water in a pot and put on fire placing your tomatoes in it and remove it after it's cooked and the skin has cracked.
- Or simply just peel off the skin the old fashion way with a knife
If you're using a regular blender, don't worry much, you can still make this soup, follow these easy steps to prepare a potato soup with a regular blender
- Sauté your diced onion in a saucepan until it's soft.
- Cut two of your (already cooked) potatoes into small sizes and add them to the pan alongside the vegetable broth, rosemary, salt, and white pepper, and simmer for about 10-15 minutes.
- When done, let it cool for a while before pouring it into the blender alongside the soy milk and blending until it's smooth.
- Return it to the saucepan and cook until it becomes hot again, chop the remaining tomatoes and pour them onto your plate, and gently pour you're on it. Serve and enjoy.
