Ingredients

  • 2 lbs bone-in chicken pieces (thighs and drumsticks)
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 cups chicken broth
  • 2 potatoes, peeled and cubed
  • 2 carrots, peeled and chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. In a large pot, heat your olive oil and add the pieces of chicken. Brown on both sides and set aside.
  2. After removing the chicken from the pot, add your already diced onion, bell peppers, and garlic, and cook for 5 minutes, or until softened.
  3. Add the diced tomatoes, tomato paste, cumin, oregano, bay leaf, chicken broth, salt, and pepper. Stir to combine.
  4. Add back the chicken pieces to the pot, reduce the heat to low and boil for about 30 minutes.
  5. Add the potatoes and carrots to the pot and continue simmering for another 20-25 minutes, until the vegetables are tender and the chicken is fully cooked.
  6. Adjust the seasoning to taste.
