Doro Wat, is considered the national Ethiopian dish, just like Shiro wat.
This Ethiopian dish is made with chicken that has been marinated in a mixture of spices, and then slowly cooked with herbs like onion, and tomatoes.

How to make Ethiopian Chicken Stew (Diro Wat)
Although a lot of Ethiopian natives have different recipes for Diro Wat, I'm going to take my time to share one of the most popular recipe for making Ethiopian chicken stew.
Ethiopian chicken stew (Diro Wat) Recipe
One major Ingredient for Diro Wat recipe is chicken. You can use a full chicken, or some chicken drumsticks.
Ingredients:
- 2 lbs chicken (thighs or drumsticks)
- 2 large onions, chopped
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp Berbere spice mix*
- 1 tbsp paprika
- 1 tsp salt
- 1/4 cup vegetable oil
- 2 tbsp tomato paste
- 1 cup chicken broth
- 2 hard-boiled eggs (optional)
Directions
- In a saucepan, or pot, add your oil and place over medium heat. Add your diced onions and saute for about 5-7 minutes. Pour in other ingredients like salt, paprika, ginger, garlic and Berbere spice mix. Stir well to combine a d cook for an additional 3 minutes until fragrant.
- Add the chicken to the pot containing the spices and coat in the spice mixture. Cook for about 5-7 minutes until the chicken is browned on all sides.
- Add the tomato paste and chicken broth to the pot. Stir well and cover with a lid.
- Reduce the heat to low and let it simmer for about 45 minutes, or until the chicken is well cooked and tender.
- If using hard-boiled eggs, peel them and add them to the pot for the last 10 minutes of cooking.
