Jollof rice is a dish that is popularly eaten in Africa, most especially in Nigeria. A typical Nigerian party is incomplete without jollof rice in it. The scents alone can draw people to events they are not invited to.

INGREDIENTS

Below are the basic jollof rice seasonings and ingredients you need for preparing this amazing dish.

  • 10-15 cups of rice
  • Tomatoes
  • Scotch Bonet (Rodo)
  • Tatashie
  • Onions
  • Vegetable oil
  • Seasonings (I prefer Knorr)
  • Salt
  • Green pepper
  • Carrot
  • Curry and thyme
  • Chicken (your desired quantity)
  • Bay leaf

PROCEDURES


STEP 1

The first thing to do is to prepare your tomato sauce. Blend all your pepper. Then fry your carrot, green beans, green pepper, and other ingredients in oil.

You can fry your bay leaf alongside other ingredients. Bay leaf is one of the party's jollof rice secret ingredients.

With the pepper you've blended, you'll have to prepare your tomato sauce by:

  1. Adding a reasonable amount of vegetable oil to a pot.
  2. Dice in some onions(in ring size)
  3. Pour in your pepper and close for a while.
  4. After a few minutes, add your seasonings, I use knorr cubes. when using knorr, you can use about 4-5 cubes(depending on the number of cups of rice you're cooking). add your salt, curry, and thyme, then cover and let it fry for a while.
  5. Check your sauce after a few minutes, and it'll have been ready

Now that your sauce is ready, let's move on to step 2

STEP 2

Now you'll have to wash and mix your rice with the tomato sauce. pour in your rice, and add a reasonable amount of water, by now your carrot, kidney beans, etc, are already inside, stir together and close for about 25 minutes.

Make sure you reduce the heat when cooking, to reduce the burning.

STEP 3

Check the jollof rice you are cooking at intervals. add water if needed, when it's half done, add your bay leaf, this gives it a good and desirable scent.

It's okay if your jollof rice starts burning, don't panic, that's what gives it the special party jollof rice taste.
