Nigerian Fried Rice Recipe



The Nigerian fried rice is no doubt a moth watering dish that has made its way to our hearts as one of the best African dishes.
Just like Jollof rice , the fried rice recipe I'm about to share with you is an easy one I incorporate when preparing my very own fried rice, so you can bet it'll give you no issues at all.


What are the ingredients to make fried rice?

  • Vegetables
A good number of veggies would be needed for your fried rice preparation, to give you the desired look, taste, and texture. Some of the vegetables needed are cabbage, corned beef, lettuce, and onions.
  • Spices
Some spices needed for your dish are salt, Maggi, curry, and thyme.
  • Extra
Some other ingredients needed include cooking oil, beef liver, or any protein of your choice, and of course, your cooking oil.

So basically, the ingredients for preparing fried rice are: 


Fried Rice Secret Ingredients

  • Coconut/groundnut/other vegetable oil
  • Raw & washed rice, long grain or basmati
  • Nigerian-style stock
  • Onions and carrots, diced (hard veggies)
  • Bell peppers, sweet corn, peas, chopped (soft mixed veggies)
  • Curry powder (or to taste)
  • Dried thyme (or to taste)
  • Diced and cooked liver (optional)
  • Seasoned and sautéed shrimps or prawns (optional)
  • Green bell pepper, diced.

Now to the main deal...

How to make Nigerian fried rice

Making your very own homemade Nigerian fried rice wouldn't give you any problem as you follow my simple fried rice recipe.

Step 1
Place your skillet over medium heat and add your cooking oil.
Pour in your diced hard veggies, and season with a pinch of salt. Stir fry for 2-3 minutes.

Step 2
Afterward, season your veggies with your seasonings ( Tumeric powder, curry, thyme, etc), and a desired able quantity of your stock. Be careful not to add too much. Let it cook for another 2-3 minutes.

Step 3
Parboil your rice in another pot, and add a small quantity of the stock (to taste). 

Step 4
When the rice is soft and ready, pour it into the skillet containing your already stir-fried vegetables.
Stir the combination together until all parts of the rice are covered by the veggies.
Taste it and check if it needs any more seasonings.
Add a small quantity of cooking oil and keep stirring to avoid it getting burnt.
