With just some basic cooking ingredients, and a microwave, you can make your very own Mexican microwave rice from the comfort of your home, and without wasting too much ingredients.


Before we get started, note that some of the basic ingredients for this Mexican rice recipe include rice, spices, and vegetables.

Mexican microwave rice recipe 

Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 cup frozen corn
  • 1/2 cup shredded cheddar cheese 


How to prepare Mexican microwave rice  

  1. In a microwave-safe dish with a lid, combine the rice, water, and vegetable oil. Cover and microwave on high for 5 minutes.
  2. Add the diced onion, bell pepper, cumin, chili powder, garlic powder, salt, and pepper to the rice mixture. Stir to combine.
  3. Add the black beans, diced tomatoes, and frozen corn to the rice mixture. Stir to combine.
  4. Cover the dish and microwave on high for 15-18 minutes, or until the rice is cooked and the vegetables are tender.
  5. Remove the dish from the microwave and sprinkle the shredded cheddar cheese over the top. Cover the dish again and let it sit for 1-2 minutes until the cheese is melted.
  6. Serve the Mexican microwave rice hot and enjoy!
