Ingredients For Preparing Cauliflower Salad Recipe 

  • 1 medium head cauliflower 
  • 1 tablespoon ground cumin
  • 3 large carrots
  • 2 teaspoon paprika
  • Salt
  • Black pepper
  • Olive oil
  • Red onion (thinly sliced)
  • Italian parsley (roughly chopped)

Cauliflower Salad Dressing

  • ¼ cup tahini
  • 1 clove garlic, grated
  • 2 tablespoons lemon juice
  • ¼ cup water
  • ¼ cup olive oil
  • kosher salt, to taste
  • pepper, to taste

How to prepare Cauliflower Salad

Follow this recipe to make your very own quick and easy Vegan cauliflower salad after all cauliflower is healthy and nutritious to the body.

  1. Preheat the oven to 220⁰C
  2. Line a baking sheet with parchment paper
  3. In a large bowl, add your already chopped carrots, cumin, paprika, cauliflower, salt, pepper and olive oil. Stir well until well-coated.
  4. Spread the vegetables on the baking sheet in a single layer and roast for 20-25 minutes, until the carrots are tender.

How to make salad dressing
Making salad dressing might not be the hardest thing to do as some deem it, follow this step to make yourself the easiest salad dressing there is.
- In a bowl, add your garlic, lemon juice, water and tahini and whisk together.
- While whisking, slowly add the olive oil until the dressing is well mixed. Season well with salt and pepper.
- In another bowl combine and mix together the onion and parsley, add the roasted cauliflower and carrots, and stir.
- Drizzle the salad with the dressing, then serve.
