Chickpea Sweet Potato Stew Ingredients
- 2 tablespoons refined coconut oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon sweet paprika
- ½ teaspoon cumin
- ¼ teaspoon dried coriander
- ⅛ teaspoon cayenne
- 15 oz chickpeas, 1 can, drained and rinsed
- 2 cups sweet potato, peeled and diced
- 15 oz fire roasted crushed tomato, 1 can
- 3 cups vegetable broth
- 5 oz fresh spinach
How to make Vegan Chickpea Sweet Potato Stew
Step 1
Heat the coconut oil over medium heat, and when the oil begins to shimmer, add the onions and cook for while (for about 5 minutes).
Step 2
Pour in the garlic and ginger and cook for another 3 minutes until fragrant. Afterwards, add the cayenne, coriander, sweet paprika, cumin and col for 2 more minutes until fragrant.
Step 3
Add the chickpeas and sweet potato, crushed tomatoes and vegetable broth and cook for about 15-20 minutes (or till the sweet potatoes are tender).
Step 4
Add the spinach and stir until wilted.
Serve immediately.
