15 Minute Vegan Vegetable Soup Recipe

This vegan vegetable soup is not only made with easy-to-use ingredients, it's also delicious and nutritious.

Being a soup lover that I am, I spend most of my time working on new recipes to make my vegetable soup a little different than the previous.

 Ingredients

  • Celery
  • Olive oil
  • Green beans
  • Peas
  • Garlic
  • Onions
  • Vegetable stock
  • Salt
  • Grounded black pepper
  • Carrot

How Do You Make Vegetable Soup From Scratch?


  1. Heat your oil in a pot
  2. Saute the garlic, celery, and onion over medium heat until golden brown.
  3. Add remaining ingredients and boil for about 30 minutes.
  4. Serve the vegan vegetable soup immediately as it is still hot.

Note

Oil: I used olive oil for this recipe, and most of my dishes because it's healthier, but you can however use any type of oil you deem fit.

Vegetable Stock: I prefer using vegetable stock because of its unique flavour, and it enhances the taste of the vegan vegetable soup. However, you can make use of water too.

Seasonings: feel free to use other herbs to taste, such as fresh parsley, basil, thyme, or rosemary.
