Lentil Bolognese Ingredients
- Lentils
- Onions or garlic
- Carrots and celery
- Thyme
- Tomato paste
- Red wine (optional)
- Fresh tomatoes
- Veggie stock
- Hemp seeds (or toasted walnuts)
- We add the onions and garlic for .ore flavor
- You can add thyme or substitute it for 2 teaspoon of dried Italian herbs.
- We add carrots and celery for sweetness and complexity
- You can substitute the veggie stock for water

HOW TO MAKE LENTIL BOLOGNESE
Step One
Saute onion in olive oil
Step Two
Add celery, garlic and carrot and continue cooking and stirring for about 5 minutes. Afterwards add herbs and seasonings.
Step Three
Add in the tomato paste, browning it a bit. Also add a good amount splash of red wine and cook (optional)
Step Four
Add the tomato and it's juice in the pot. Afterwards add your lentils, hemp seeds or walnut, and broth.
STEP FIVE
Bring to a boil and cover. Simmer for 20-30 minutes. Once the lentils are tender, remove the lid and cook for while.
Taste and adjust seasonings when necessary. Serve hot!
